You'll start to see the joker label appear from time-to-time. This will be found on boulders that will be changed randomly and regularly. It simply means expect it to change. It'll be found underneath the start labels of mainly V1-4 grades.
It doesn't mean that the others boulders won't change it's just that these definitely will.
